Ingredients:
For the Pineapple Glazed Chicken:
1 lb (450g) boneless, skinless chicken breasts
1 cup pineapple juice (no added sugar)
2 tablespoons soy sauce (low sodium)
1 tablespoon honey
1 tablespoon apple cider vinegar
2 cloves garlic, minced
1 teaspoon ginger, grated
1/4 teaspoon red pepper flakes (optional)
1 teaspoon cornstarch mixed with 2 teaspoons water (for thickening the glaze)
For the Rice:
1 cup rice, rinsed
2 cups water or low-sodium chicken broth
For the Bowl Assembly:
1/2 red bell pepper, diced
1/2 cucumber, diced
1/4 red onion, finely chopped
1/4 cup fresh cilantro, chopped
1 tablespoon lime juice
1 avocado, sliced (optional)

Instructions:
Cook the Rice:
